Alondra's Barbacoa and Cocina was born from a simple conviction: that the most extraordinary meals begin with ingredients treated with reverence and patience.

Our recipes have traveled through generations, each one refined not by chefs in white jackets, but by the hands of family members who understood that cooking is an act of care. The barbacoa is slow-cooked until it surrenders completely. The salsas are ground the way they always have been — by hand, with intention.

Every dish on our menu is a story — of patience, of place, of the hands that prepared it. Here are a few of the ones our guests return for.

Barbacoa

Slow-cooked beef cheek, braised for hours in a blend of dried chiles and aromatic spices until it falls apart at the touch. Served with handmade tortillas and fresh salsa.

Tamales

Hand-poured into corn husks and steamed to tender perfection. Available in pork, chicken, or mole — each one wrapped with the same care our grandparents showed.
